Watermelon salad

(Makes 4 one-cup servings)

4 cups watermelon
1/2 cup feta cheese
1 tbsp extra virgin olive oil
1 tsp honey
1 tsp fresh lemon juice


1. Slice or cube watermelon
2. Arrange on plate or in bowl
3. Sprinkle with crumbled feta cheese
4. Whisk together honey, lemon juice, olive oil
5. Drizzle with vinaigrette and garnish with mint sprigs
