Fresh fava bean hummus

(Makes 12 servings)

1 lb. fresh fava beans (removed from pods)
1 Tbs extra virgin olive oil
1 clove garlic chopped
2 Tbs lemon Juice
3 Tbs fresh Italian parsley chopped
1 tsp Tahini Paste

Blanch fava beans in boiling water for approx. 1 min. Place in ice bath.
Remove outer skin.
In a food processor, add favas, olive oil, garlic, lemon juice, parsley, and tahini
Blend to consistency (may need to add some water to help emulsify mixture)
